RASAM PODI FOR STORAGE

Ingredients


Coriander seeds - 1 cup
Cumin seeds - 1/4 cup
Black pepper corns - 1 or 1 1/2tbs (upto your spicy level)
Red chillies - 15 to 20 nos. (upto your spicy level)

Method

  1. Fry coriander seeds in a heated pan until it gets aroma and keep it aside to get cool.
  2. Fry cumin seeds and pepper corns for 1 or 2 mins, then keep it aside to get cool.
  3. Fry red chillies for a minute and keep it aside to get cool.
  4. Finally, grind altogether in a mixie until it gets neither too coarse nor fine powder.
  5. We can keep this rasa podi in a air tight container for more than 6 months.


IDLY PODI

 

Ingredients

Red chillies - 1 cup
Byadagi Chillies - 15
Whole Garlic - 1 (don't remove skin)
Channa dal - 2 tbs
White sesame seeds - 2-3 tbs
Curry leaves - 1 or 2 sping
Urud dal - 1 1/4 cup
Hing powder - 1 tbs
Oil - 5-6 tbs
Salt - as required

Method

  1.  Heat 2 tbs of oil in a pan, fry red chillies and byadagi chillies until 2 to 3 mins or before it gets black color. Keep it aside to get cool.(part-A)
  2. Add 1/2 tbs oil in a pan, fry whole garlic,sesame seeds, curry leaves and channa dal until sesame seeds are split & channa dal gives some aroma. Keep it aside to get cool. (part-B)
  3. Add 2 1/2 tbs oil in a pan, fry urud dal and hing powder until urud dal turns into light brownish color. Keep it aside to get cool.(part-C)
  4. Grind part-A in the mixie, then add part-B and grind until it turns to coarse powder.
  5. Finally, add part-C and salt. Grind altogether into a fine powder.
  6. Idli podi is ready. Serve it with idly, dosa, idiyappam and sometimes with curd rice.

PODI FOR STUFFING

This podi is mainly for veg. stuffing like Ennai kathirikkai, Okra(Lady's finger) curry, baby potato curry, stuffed carrot curry and goes on. You can prepare this and have it stored in an air tight box.

Ingredients


Coriander seeds - 1 tsp
Mustard seeds - 1 tsp
Urud dal - 1 tsp
Fenugreek seeds - 10 seeds
Cumin seeds - 1/2 tsp
Red chillies - 5

Method

  1. Heat a pan without oil and fry all the above ingredients.
  2. Allow it to cool and grind it well. Neither coarse nor fine powder.

PARUPPU PODI



It is one of the famous food items in the south India. It is very healthy and also tasty. We can give this to kids too. It contains much proteins. I love this podi from my childhood. My mom always use to made this specially for me. I have learned this from my mom.




Ingredients


Fried/roasted grams - 3/4 cup
Toor dal - 1 tbs (optional)
Red chillies - 10-12 number
Black pepper - 1/2 tsp (optional)
Garlic - 5pods
Salt - as required

Method

  1. Without oil fry red chillies, garlic, toor dal, black pepper and salt in the pan.
  2. Once it gets cool, grind all together and add fried grams to grind all those into fine powder.

Note

  1. If you are going to use black pepper, reduce red chillies. 
  2. You can use this podi with rice and ghee. It will be very good to eat. Also you can use this with idli and dosa too.  
  3. You can store this in a air tight container for 3 to 4 months.
