INSTANT HOMEMADE KHOYA - WITH NO COOKING - 150 th post

Hi friends,

I am happy to share this useful recipe INSTANT HOMEMADE KHOYA as my 150th post.

Khoya is a dairy product which is used by Indians for most of their sweets. There are types of khoya which are classified according to their moisture level. Here I am giving the recipe for 50% of moist on the khoya. If you preserve it in the fridge with air tight box, this will stand only for 2 or 3 days. If the khoya is dry, it will stand for years.

Born story of the recipe is.. I want to make lavanga latika for SNC event. But I don't have khoya in my pantry. All of the sudden I thought of trying this recipe to make khoya. It tastes same as khoya and so I used for lavanga latika. Hope you all guess my next post... Yes! it is Lavanga Latika.





Ingredients


Milk powder -1/2 cup
Sugar - 1 or 1.5 tsp (optional)
Water - 3 1/2 tsp
Ghee - for greasing fingers

Method

  • Add sugar, then add water little by little to the milk powder and mix well with spoon.
  • Then grease your fingers with ghee and mix them with fingers to get soft dough.
  • Wrap the soft ball with cloth or keep it in the air tight box for 5 to 10 minutes.
  • Take the dough ball and crush it. Khoya is ready.

HOME MADE BAJJI, BONDA AND PAKODA MIX

Bajji and pakoda are my kid's and hubby's favorite. SO I would like to make these recipes often. Most of the time, I feel lazy to mix all the ingredients. So that I prepare this home made healthy mix in the air tight container. IF it is handy, you could do any of these snacks with tension free to your unexpected guest. 

For the healthy recipe, I won't use the optional ingredients. But if you want more tasty like store bought bajji, bonda and pakoda mix, please include the optional ingredients too. If you want colorful snack, please add food colors. I never use food colors with any of these snacks. It is not good for health. SO please avoid using food colors.





Ingredients


Besan flour - 2 cup
Rice flour  - 3 tbsp
Red chilli powder -2 or 3 tsp
Hing powder - 1/2 tsp
Cooking soda - a pinch (optional)
All purpose flour - 1 1/2 tbsp (optional)



Method



  • Mix all the ingredients well.
  • Preserve it in the air tight container. It may last for 6 months, but I would finish it off within 3 months. My aunt is always keep this mix in the fridge but I never.

IMPORTANT TIPS OF HOW TO KEEP OIL FOR MAKING FRITTERS



  • Oil should be in the right amount of heat, then only you will get good tasting fritters, else it will spoil the taste of the fritters.
  • First drop a little amount of mixture or a single piece of the mixture/ batter to the heated oil, 
            If it raises up immediately, the oil is in the correct heat.
            If it goes darker color immediately, then the oil is too hot, it is not right to make any fritters.
            If it doesn't comes up and stay at the bottom, the oil has no enough heat.

IMPORTANT TIPS FOR FROZEN COCONUT





  • Microwave : Defrost coconut with medium power. you are not suppose to defrost it in high power. While defrosting, coconut should not go warm or hot. It must be cool & soft.

  • No Using Microwave: Remove coconut from the freezer half an hour to an hour before you use or wait until it becomes soft. While grinding chutney, use luke warm water for best results.

HOME MADE VEGGIE BROTH / CHICKEN BROTH



Veggie filtered water can be used as veggie broth. Chicken filtered water can be used as chicken broth. You can use that broth for soup or any curries. Home made veggie broth is good for health. No preservatives and its fresh one to use. The below picture is carrot & potato veggie broth.




VEGGIE BROTH


Ingredients 


Any veggies
Water
little salt

Method


Bring all together to boil in the stove or microwave.

Filter water and veggies separately.

Use veggies for curries or any side dishes.

Veggie water with salt is broth which is very tasty for soups or any gravies.


CHICKEN BROTH


Ingredients 


Chicken
Water
Salt

Method


Same as veggie broth procedures.

HOME REMEDY FOR THROAT PAIN / DRY THROAT

If you have dry throat or severe throat pain, please have this following drink 3 to 4 times a day. You can feel the improvement. This is our Indian home remedy treatment. I went to doctor office in USA for severe cold and throat pain. They prescribed this same drink. My mom scolded me, if I would say this you won't hear my words, but you could hear the same words from your doctor with $50 fees :)

This is not only for throat pain, also a good health drink. My great granny(85+ ) had this drink regularly from her childhood to death. 


 

Ingredients


Honey - 1 tsp
Lemon - 1/4 no.
Warm Water - 200 ml

Method

Mix all together and drink.

AVOID SPOILING GREEN CHILLIES ALMOST A MONTH

Green chillies are main ingredient in our cooking. Green chillies are useful for reducing fat content in our body. IF we eat green chillies it will reduce the fat content within 4 hours.


I usually buy lot of chillies and keep it for 15 to 20 days. How to avoid spoiling green chillies for 20 - 30 days?




I usually remove the stem of each green chillies and store all of them in an air tight container. Have to refrigerate that container.






While refrigerating, green chillies should not be wet. I'll wash green chillies while cooking not storing time.


STORE ROASTED RAVAI IN AN AIR TIGHT CONTAINER

I am lazy most of the time. So I usually fry ravai and store it in an air tight container. If I want to prepare upma or  kesari or  kichadi or payasam, I won't spend time in roasting, just use the stored ravai right away.

Roasted stored ravai avoid spoil ravai from bugs/ insects.


Ingredients 


Ravai / Sooji -  2 pounds or how much do you want to store.

Method

  1. Heat pan with no oil.
  2. Fry ravai for a while or until it is hot but it should not be in brown color. 
  3. Remove it from the pan and allow it to cool. 
  4. Store roasted ravai in a air tight container.

HOW TO MAKE FILTER COFFEE?

Serving size - 1



Ingredients

For Decoction

Coffee powder - 3 1/4 tbsp
Hot Water - 1 cup





For Coffee

Milk - 3/4 cup
Coffee decoction - 1/4 cup or less
Sugar - 2 tsp or 1 1/2 sugar packets

Method

For Decoction
  1. Add 3 1/4 tbsp of coffee powder in the upper half of the coffee filter and fix the upper half on the lower half of the coffee filter.
  2. Add hot water to the upper half of the filter and close it with a lid. Water should be very hot for preparing decoction is essential.
  3. We can collect the decoction in the lower half of the filter within 10 to 15 minutes.
  4. If you have excess of decoction after you use, you can store it in the air-tight container and keep it in the fridge for 2 to 3 days

For Coffee
  1. Boil milk in a pan or microwave. It should be very hot. 
  2. Add decoction and sugar in a cup. Add the hot milk into the same cup.
  3. Mix well by transfering coffee from one cup to another cup. Repeat this third step for 1 or 2 times.
  4. Finally transfer coffee into a cup with foam. Filter coffee is ready with foam on its top.

Note:

While preparing coffee, refrigerated decoction should be reheated in the microwave. Then, only you can get nice aroma from the coffee.
